Penicillin

Ginger, Lemon, Smoke

A traditional Penicillin cocktail is made with scotch whiskey, ginger, honey, and fresh lemon juice. And, well, we're not going to mess with it, because it's pretty great just how it is.

Here we present this venerable classic in style in the Porthole, where you can enjoy how the smoke and spice intensifies with time as the mixture infuses

First, make sure you've got the right tools for the job:

Next, let's make something delicious!

Inside the Porthole:
  • 6-8 slices lemon, washed and sliced into rounds, seeds removed
  • 4 slices fresh ginger, sliced lengthwise
  • 1" x 4" slice of honeycomb
Liquid to be Added:
  • 1½ oz (45 ml) brewed lapsang souchong tea, cooled
  • 5 oz (120 ml) Johnnie Walker Black Label
  • 5 oz (120 ml) Laphroaig Single Malt Scotch Whiskey, 16 yr. 
To Assemble and Serve:

Arrange the infusion ingredients inside the Porthole. Close the Porthole, tighten screw, and check the seal for good contact on both sides.

Next, combine the liquid ingredients, and transfer this mixture into the assembled Porthole through the spout.

This cocktail is best when infused at least 30 minutes, up to around 4 hours.

Tips:
  • If you prefer sipping this chilled, you can optionally pre-chill your liquid ingredients before assembling the Porthole. Alternatively, you can pour servings over ice.
