White Negroni

Apart from its unusual visual appeal (as the classic Negroni is characteristically bright red), a White Negroni is a slightly softer, gentler variant of its more earthy, pushy bigger brother. This is due to the use of white bittering liqueurs rather than the traditional Campari. There's also room to be creative here - a sweeter vermouth like Cocchi Americano can pull the drink more sweet, whereas Dolin Dry can persuade it in the other direction.

  • 1½ oz gin
  • 1 oz Cocchi Americano, Lillet Blanc, or Dolin Dry
  • ½ oz bitter, such as Suze or Luxardo Bianco Bitter
  • 1 orange peel, removed with a peeler

Combine all ingredients with ice in a cocktail mixing glass. Stir with ice until chilled and diluted, then strain into a chilled cocktail glass. Express the orange peel over the drink, then garnish drink with the peel.
