Rum, Celery, Lime

In this recipe, matcha tea's earthy, grassy flavor is complemented by celery and aged rum. St. Germain, an elderflower liqueur, adds brightness, while cucumber covers two bases: the peel is bitter and vegetal, whereas the interior is aromatic and melon-like.

If you don't own a juicer to extract juice from celery, you can muddle a few short pieces in with the cucumber. Be sure to crush these pieces thoroughly to extract as much flavor as possible.

  • 2 oz aged rum
  • ½ oz fresh lime juice, strained to remove any pulp and seeds
  • ¼ oz St. Germain
  • ¼ oz celery juice
  • ¼ oz simple syrup
  • ⅛ tsp matcha tea powder
  • 2 cucumber wheels

Add the syrup and one cucumber wheel to a cocktail shaker, and muddle together to crush the cucumber. Add the remaining ingredients (except the other cucumber wheel), then dry shake to incorporate the matcha thoroughly. Add ice, then shake again vigorously until chilled and diluted. Double-strain into a chilled martini glass. Garnish with the remaining cucumber wheel.
