Aged Rum Daiquiri

Oak, Molasses, Lime

A classic daiquiri is perhaps a perfect example of the art of balance. The drink's simplicity leaves nowhere to 'hide' when it comes to properly balancing sweetness, acidity, and alcohol; a quarter ounce too little or too much of any of its three ingredients can transform it from delightfully delicious to cloyingly sweet, bitingly acidic, caustically boozy, or thick and candy-like. To further complicate matters, the choice of rum can dramatically affect the equation.

Our recipe here is the way we like to balance aged rum, whose caramel or toffee-like notes tend to create the illusion of added sweetness. Additionally, we find a spritz of grapefruit oil the perfect way to accessorize this delicious cocktail.

  • 2 oz aged rum
  • 1 oz fresh lime juice, strained to remove any pulp or seeds
  • ¾ oz simple syrup

Combine all ingredients with ice in a cocktail shaker. Shake vigorously until chilled and diluted, then double-strain into a chilled coupe glass.
