Vanilla Cinnamon Spice Syrup

Maple, Pink Peppercorn, Allspice, Anise

Snazz up your brunch table with this delightfully complex syrup infusion! Equally at home in tea, over pancakes, or swirled into yogurt, this delicious syrup is a guaranteed key to the Clean Plate Club.

First, make sure you've got the right tools for the job:

Next, let's make something delicious!

Inside the Porthole:

  • 2 vanilla beans
  • 15g cinnamon
  • 5g allspice
  • 5g cloves
  • 5g red peppercorns
  • 5g star anise
  • 5g cardamon

Liquid to be Added:

  • 400ml maple syrup (see note)

To Assemble and Serve:

Arrange the infusion ingredients inside the Porthole. Close the Porthole, tighten screw, and check the seal for good contact on both sides.

Add syrup to the assembled Porthole through the spout.

Allow to infuse for at least an hour, up to several days.

Tips:

  • This recipe is equally delicious with simple syrup, agave, or any other syrup you'd like to use as a foundation for infusion.
  • If infusing for longer than a week, store the Porthole in the refrigerator to extend its shelf life. 
  • For a faster infusion, you can double the amount of each spice.
