Apple Tarragon Shrub

Shrubs are vinegar-based drinking syrups. Usually infused with various flavors, these syrups are often used in cocktails and soft drinks.
While the notion of drinking vinegar may seem off-putting, shrubs are often used in small proportions, adding a brightening dash of acidity the same way a squeeze of lemon might. Drinks made with shrubs are often reminiscent of a bright white wine, in terms of relative acidity. 
This recipe offers an easy, delicious introduction to the world of shrubs – mix this with sparkling water for a fruity, herbal beverage that's crisp and bright.

Inside the Porthole:

  • 1 apple, washed and cut into thin slices
  • 1 handful fresh tarragon sprigs, washed

Liquid to be Added:

  • apple cider vinegar

To Assemble and Serve:

Arrange the infusion ingredients inside the Porthole. Close the Porthole, tighten screw, and check the seal for good contact on both sides.

Next, add the cider vinegar to the assembled Porthole through the spout.

Infuse for at least an hour, up to several days. 

Tips:

  • Combine a few tablespoons (or more, to taste) with sparkling water and ice for a bright, refreshing soda. 
  • Note that the apple will discolor over time. This is ok! You can minimize this by inserting the stopper into the Porthole to slow oxidation.
